Crispy potato and squash fritters, a delicious blend of shredded veggies, egg, and flour, lightly fried to perfection.
Ingredients:
  • 2 cups shredded potatoes
  • 1 cup shredded yellow squash
  • 0.5 cup chopped onion
  • 1 egg
  • 4 tablespoons self-rising flour
  • 0.25 teaspoon garlic salt
  • salt and pepper to taste
  • 0.25 cup cooking oil
Instructions:
  • Combine potatoes, squash, onion, egg, flour, garlic salt, salt, and pepper in a large bowl. Adjust consistency by adding more flour if thin or milk if thick. Shape into 3-inch patties.
  • Heat a thin layer of oil in a large skillet over medium-high heat. Add patties and cook until golden brown on both sides. Place on a paper towel to drain excess oil.
