Lemon pan-fried squash and green beans - a zesty, effortless side dish.
Ingredients:
  • 2 yellow squash, sliced
  • 1.5 cups green beans
  • 1.5 cups halved cherry tomatoes
  • 1 tablespoon dried parsley
  • 0.5 teaspoon ground coriander
  • 0.125 teaspoon salt, or to taste
  • 0.125 teaspoon ground black pepper, or to taste
Instructions:
  • In a nonstick skillet over medium heat, sauté squash and green beans until slightly softened. Add tomatoes, lemon juice, parsley, coriander, salt, and black pepper. Continue cooking until tomatoes have softened.
