Delicious casserole with layers of squash, zucchini, tomato, and sweet onion in a buttery Romano cheese sauce.
Ingredients:
  • 2 medium yellow squash
  • 2 large zucchini
  • 1 Vidalia onions, thinly sliced
  • 2 large tomatoes, sliced
  • 2 cups grated Romano cheese
  • 0.5 cup butter, divided
Instructions:
  • Preheat the oven to 375°F (190°C) to create the perfect cooking environment.
  • Slice the zucchini and squash into slender layers. Grease a 7x11-inch baking dish and layer the squash, zucchini, onion, and tomatoes in the dish. Top with cheese, evenly place butter slices between each veggie layer, and season generously with salt and pepper.
  • Layer the vegetables until all are used, and then finish by topping with the remaining butter and cheese.
  • Bake covered at 375°F (190°C) for 20-30 minutes, until veggies are tender and cheese is melted and bubbly.
