"Southern-inspired squash casserole: mix zucchini and yellow squash, top with bread crumbs or cheese."
Ingredients:
  • 1 pound summer squash, sliced
  • 0.25 cup butter
  • 0.25 cup chopped green bell pepper
  • 0.5 cup chopped onion
  • salt and pepper to taste
  • 0.5 cup shredded Cheddar cheese
  • 0.5 cup pecans, chopped
  • 0.5 cup bread crumbs
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Bring a large pot of water to a boil, then simmer the squash until tender. Drain thoroughly.
  • In a large mixing bowl, combine squash and most of the butter, leaving a bit for later. Mash the mixture together. Add bell pepper, sugar, onion, egg, mayonnaise, salt, pepper, cheese, and nuts. Transfer everything to a 1-quart casserole dish. Sprinkle bread crumbs on top and dot with the remaining butter.
  • Bake at 350°F (175°C) for 35-40 minutes until golden brown.
