Enhance summer squash casserole with zesty ranch mix and crispy bread topping.
Ingredients:
  • 3 pounds yellow squash, chopped
  • 2 medium onions, chopped
  • 1 cup shredded sharp Cheddar cheese
  • 3 large eggs, beaten
  • 12 saltine crackers, crushed
  • 1 (1 ounce) package dry Ranch-style dressing mix
  • 2 cups dry bread stuffing mix
  • 0.5 cup melted butter
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • In a large saucepan over medium-high heat, melt 2 tablespoons of butter. Sauté the squash and onions until tender, which takes about 5 to 10 minutes. Off the heat, mix in Cheddar cheese, mayonnaise, eggs, crackers, ranch dressing mix, and salt. Transfer the mixture to a medium baking dish.
  • Prepare the topping by combining stuffing with melted butter in a bowl, then sprinkle it over the squash mixture.
  • Bake in the oven until golden brown and set, 20-30 minutes.
