Cheesy squash casserole with crispy topping - a delicious and versatile dish perfect for any meal!
Ingredients:
  • 4 cups sliced yellow squash
  • 0.25 cup water, or more as needed
  • 35 buttery round crackers, crushed
  • 1 cup shredded Cheddar cheese
  • 2 eggs, beaten
  • 0.75 cup milk
  • 0.25 cup butter, melted
  • ground black pepper to taste
  • 2 tablespoons butter
Instructions:
  • Assemble all ingredients before starting.
  • Preheat your oven to 400 degrees F (200 degrees C) to create the perfect cooking environment for your dish.
  • In a large skillet over medium heat, simmer squash and onion in water until squash is tender, approximately 5 minutes. Drain and transfer to a large bowl.
  • Combine cracker crumbs and cheese in a medium bowl. Then gently fold half of the mixture into the cooked squash and onions.
  • Combine eggs and milk in a small bowl, then stir into the squash mixture.
  • Mix in 1/4 cup of luscious melted butter, then season generously with salt and pepper. Transfer the mixture into the baking dish. Top it off with the rest of the cracker mixture and gently place small pieces of 2 tablespoons of butter on top.
  • Bake in the oven until golden brown, approximately 25 minutes.
  • Savor this dish while it's hot!
