Indulgent squash casserole with creamy texture, can swap bread crumbs for stuffing mix. Perfect for enjoying as leftovers!
Ingredients:
  • 2 pounds crookneck yellow squash, sliced
  • 1 small onion, chopped
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (8 ounce) container sour cream
  • 0.25 cup butter, melted
  • 1.5 cups bread crumbs
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C).
  • In a large saucepan, combine the squash and onion with enough water to cover them. Bring to a gentle boil over medium heat and cook until tender, around 10 minutes.
  • Pour the squash, onion, and cooking liquid into a 2 1/2 quart casserole dish. Mix in chicken soup, sour cream, and melted butter until slightly soupy. Sprinkle bread crumbs on top to absorb the liquid.
  • Place in a preheated oven and bake uncovered for 30-45 minutes until golden brown and bubbly.
