Elevate buttercup squash by stuffing it with a savory mixture of bacon, onion, and dates, then bake to perfection.
Ingredients:
  • 2 slices bacon, chopped
  • 1 onion, chopped
  • 0.66666668653488 cup chopped dates
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon dried basil
  • 2 tablespoons chicken stock
  • 1 butternut squash
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C).
  • Fry bacon in a large skillet on medium-high heat until crispy, around 10 minutes. Remove bacon with a slotted spoon and keep 2 teaspoons of bacon drippings in the skillet. Discard excess drippings. Drain bacon on paper towels. Sauté onions in the remaining drippings until translucent, approximately 5 minutes.
  • Combine the crispy bacon, sweet dates, fragrant oregano, and aromatic basil with the cooked onion, then pour in the chicken stock to create a luscious filling.
  • Prepare the squash by removing the top and stem like a jack o'lantern, then scoop out the seeds and stringy pulp. Remove the small button at the bottom of the squash. Fill the cavity with the date filling, replace the top, and place the squash in a baking dish. Add 1/2 inch of water to the dish and cover with aluminum foil.
  • Roast in the preheated oven until the squash is tender, for 40 minutes to 1 hour. Check for doneness by inserting a knife at the base. Slice into wedges before serving.
