Ground Beef-Stuffed Butternut Squash

Butternut squash stuffed with sautéed apple, ground beef, and creamy goat cheese, baked to perfection.
Ingredients:
  • 1 (2 pound) butternut squash
  • 1 teaspoon olive oil
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 onion, diced
  • 1 apple - peeled, cored, and diced
  • 3 cloves garlic, diced
  • 2 tablespoons salted butter
  • 2 tablespoons brown sugar
  • 0.25 cup crumbled goat cheese
Instructions:
  • Preheat the oven to 375°F (190°C) for the perfect cooking temperature.
  • Halve the butternut squash lengthwise and remove the seeds. Brush the cut side with 1 teaspoon of oil, then place it cut-side down on a baking sheet covered with aluminum foil.
  • Bake in the preheated oven for about 30 minutes until tender. Remove and allow to cool for 5 to 10 minutes, while keeping the oven on.
  • In a large sauté pan or skillet over medium-high heat, heat 1 tablespoon of oil. Brown and crumble ground beef for about 10 minutes. Add onion, apple, and garlic, and cook until slightly soft, about 5 to 10 more minutes, stirring occasionally.
  • Place the squash halves cut-side up on the baking pan and fill with the savory beef mixture. Top each with a dollop of butter and a sprinkle of brown sugar.
  • Bake in the oven until the brown sugar is golden brown, 15 to 25 minutes. Remove squash from the oven and sprinkle each half with goat cheese. Serve.
