Transform St. Patrick's day leftovers into a mouthwatering casserole by layering corned beef, sauerkraut, Swiss cheese, and biscuit dough, creating a delicious meal.
Ingredients:
  • 2 tablespoons butter
  • 0.5 onion, chopped
  • 1 pound cooked corned beef, cut into bite-size pieces
  • 0.5 cup chili sauce
  • 0.5 cup mayonnaise
  • 1 (14 ounce) can sauerkraut, drained
  • 1.5 cups shredded Swiss cheese, divided
  • 1 (12 ounce) can refrigerated biscuit dough
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a 2-quart casserole dish.
  • In a skillet, heat bubbly butter over medium heat. Stir in onion and cook until browned, about 8 minutes. Set aside.
  • Combine corned beef, chili sauce, and creamy mayonnaise in a bowl, gently stirring until well mixed.
  • Layer the sauerkraut at the bottom of the casserole dish.
  • Layer the corned beef mixture over the sauerkraut, followed by the cooked onions, and finish by generously topping with 1/2 cup of Swiss cheese.
  • Cover a casserole dish tightly with shiny aluminum foil to lock in all the fantastic flavors, then slide it into the cozy preheated oven to bake for a tantalizing 30 minutes.
  • Slice the biscuits in half. Take the casserole out of the oven and layer the halved biscuits on top. Bake until the biscuits turn a light golden brown, approximately 18 minutes.
  • Cover the casserole with the remaining 1 cup of Swiss cheese and bake for 3-5 minutes until the cheese is melted and bubbly.
