Stand 'n' stuff crispy chicken tacos with lettuce and avocado

Create vibrant chicken tacos with fresh toppings like avocado, tomato, and tangy sour cream.
Ingredients:
  • Old El Paso Stand 'N Stuff Crispy Chicken Soft Taco Kit
  • 500g RSPCA Approved Chicken Breast Fillets, cut into 3cm pieces
  • 60ml olive oil
  • 1/2 iceberg lettuce, shredded
  • 1 avocado, finely chopped
  • 8 cherry tomatoes, quartered
  • 120g sour cream
  • 1 lime, cut into wedges
Instructions:
  • Coat the chicken with the Crispy Chicken Spice Mix from the taco kit by tossing it in a plastic bag. In a frying pan over medium-high heat, heat oil and add the chicken. Cook without stirring for 1 min to help the crumbs stick. Continue to cook, stirring occasionally, for another 6 mins until golden and crisp. Alternatively, coat the chicken in oil, then the spice mix, and bake in a single layer on a lined tray at 220C for 15-20 mins until golden and crisp.
  • Warm the soft taco shells according to the instructions on the packet.
  • Assemble tacos with lettuce, avocado, tomato, chicken, sour cream, and Thick 'N Chunky Salsa from the taco kit. Garnish with lime wedges before serving.
