Tilapia Tacos

Whip up quick and tasty Tilapia Tacos in 20 minutes using an Old El Paso™ Stand 'N Stuff Taco Dinner Kit. Taco night just got easier and more delicious!
Ingredients:
  • 1 package (8.8 oz) Old El Paso™ Stand 'n Stuff Taco Dinner Kit
  • 1 lb tilapia fillets, cut into 1-inch pieces
  • 2 1/2 cups coleslaw mix (from 16-oz bag)
  • 1/4 cup coleslaw dressing
  • 1 avocado, pitted, peeled and diced
  • Lime wedges, if desired
Instructions:
  • Preheat your oven to 375°F and generously coat a large cookie sheet with cooking spray.
  • Place the seasoning mix (from dinner kit) and fish pieces in a large resealable plastic bag. Seal the bag and shake it to evenly coat the fish with the seasoning. Then, place the fish on one side of a cookie sheet and bake for 8 to 10 minutes or until the fish easily flakes with a fork. Lastly, add the taco shells (from dinner kit) to the other side of the cookie sheet for the last 4 minutes of bake time.
  • In a medium bowl, gently mix the coleslaw with the dressing until well combined.
  • Fill each warmed taco shell with an equal portion of coleslaw. Add fish, diced avocado, and 2 teaspoons of taco sauce from the dinner kit on top. Serve with lime wedges.
