Delicious tilapia tacos with romaine lettuce, tomatoes, cilantro, and avocado salsa verde.
Ingredients:
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon garlic salt
  • 4 (4 ounce) fillets tilapia
  • 12 romaine lettuce leaves
  • 0.5 avocado - peeled, pitted and diced
  • 0.25 onion, minced
  • 0.5 jalapeno pepper, seeded and minced
  • 1 tablespoon water
  • 1 teaspoon dried cilantro
  • 1 cup sliced cherry tomatoes
Instructions:
  • Heat your oven to a toasty 400 degrees F (200 degrees C).
  • Mix Cajun seasoning, chili powder, paprika, garlic salt, and ground black pepper in a bowl. Coat tilapia fillets evenly on both sides with the spice mixture and drizzle lemon juice over each side. Arrange the seasoned fillets on a baking sheet.
  • Simply bake in the oven until perfectly cooked, approximately 8 to 10 minutes.
  • Shred the tilapia and divide evenly among the romaine leaves.
  • To create the flavorful avocado salsa verde, blend ripe avocado, onion, zesty jalapeno pepper, garlic, and water until smooth. Finish by gently folding in fresh cilantro for a burst of vibrant flavor.
  • Add a vibrant finishing touch to your tacos by generously spooning salsa verde over them and scattering halved cherry tomatoes on top.
