Scallops in the shell with Asian dressing

Stunning presentation: Asian-style scallops on shells.
Ingredients:
  • 9.20 gm olive oil
  • 1/2 onion, very finely chopped
  • 2 garlic cloves, crushed
  • 44.00 gm sweet chilli sauce
  • 12.20 gm fish sauce
  • 2 tsp palm sugar (see Notes)
  • 125ml chicken stock
  • 24 scallops with roe on the shell (see Notes)
  • Coriander leaves, to garnish
Instructions:
  • Warm the oil in a small saucepan over gentle heat. Sauté the onion for 2-3 minutes until tender. Stir in the garlic, sweet chilli sauce, fish sauce, palm sugar, and stock. Simmer uncovered for 5 minutes until the stock is almost fully reduced. Remove from heat and set aside.
  • Prepare the scallops by removing them from their shells, cleaning the shells, and patting them dry. Cook the scallops in a pan or on the barbecue for 1-2 minutes per side until done. Place the cooked scallops back into their shells, drizzle with sauce, and garnish with fresh coriander leaves.
