Steak, Guinness & cheese pie

Indulge in a cozy steak and Guinness pie for ultimate comfort on chilly days.
Ingredients:
  • 3 red onions
  • 3 cloves of garlic
  • 2 carrots
  • 2 sticks of celery
  • 4 field mushrooms
  • a few sprigs of rosemary
  • olive oil
  • 1 kg quality brisket or stewing beef cut into 2cm cubes
  • 440 ml Guinness (no lager, please!)
  • 2 heaped tablespoons plain flour plus extra for dusting
  • 140 g Cheddar cheese
  • 170 g puff pastry
Instructions:
  • Preheat the oven to 190ºC/375ºF/gas 5. Peel and chop the onions, garlic, carrots, and celery. Slice the mushrooms and finely chop the rosemary. In a large ovenproof pan, heat 1 tablespoon of olive oil over low heat. Add onions and cook gently for about 10 minutes until softened. Increase the heat, add garlic, carrots, celery, mushrooms, beef, rosemary, a pinch of sea salt, and 1 tsp black pepper. Cook for 3-4 minutes, then pour in Guinness, stir in flour, and add enough water to cover. Simmer covered in the oven for 2 ½ hours until meat is tender. If needed, reduce on stovetop until thickened. Stir in half the grated cheese, transfer to a pie dish, and cool slightly. Roll out pastry on a floured surface, sprinkle remaining cheese over filling, place pastry on top, seal edges, and score a pattern. Brush with beaten egg and bake at bottom of oven for 45 minutes until golden. Serve with peas.
