Savory steak and rice stir-fry with bell peppers, diced tomatoes, and flavorful soy-garlic sauce. Perfect for a speedy and delicious meal!
Ingredients:
  • 1.5 pounds round steak
  • 1 medium green bell pepper
  • 2 tablespoons vegetable oil
  • 1 (29 ounce) can diced tomatoes
  • 0.25 cup soy sauce
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon ground black pepper
  • 4 tablespoons cornstarch
  • 1 cube beef bouillon cube
  • 2 cups warm water
  • 2 cups hot cooked rice, or as needed
Instructions:
  • Remove any excess fat from the steak and cut it into thin strips measuring 2-3 inches in length. Core and remove seeds from the bell pepper, then thinly slice it into strips measuring 3 inches in length.
  • In a large skillet over medium-high heat, sauté steak in hot oil for 2 to 3 minutes. Add bell peppers and continue cooking and stirring until peppers begin to soften and steak is nicely browned, around 3 to 5 minutes.
  • Lower the heat and incorporate diced tomatoes, soy sauce, garlic powder, ginger, and black pepper. Cover and let it simmer for 10 minutes.
  • In a bowl, combine cornstarch and bouillon cube with water, stirring until fully dissolved. Transfer the mixture to the skillet and simmer covered, stirring occasionally, until the sauce thickens to a gravy-like consistency, approximately 10 minutes.
  • Serve the delicious mixture over steaming hot rice.
