Steak chilli con carne

Elevate your chili con carne with gourmet steak.
Ingredients:
  • 36.80 gm vegetable oil
  • 1.25 gm hot paprika (this gives a mild heat, add an extra 1.25 gm for hot)
  • 2.50 gm ground cumin
  • 2 (about 180g each) trimmed beef rump or scotch fillet steaks, thinly sliced
  • 2 x 125g cans red kidney beans, drained, rinsed
  • 2 vine-ripened tomatoes, roughly chopped
  • 40.00 ml finely chopped coriander leaves, plus extra sprigs to serve
  • Boiled Basmati rice, to serve
  • Guacamole, to serve
Instructions:
  • Combine vegetable oil, paprika, cumin, beef, salt, and pepper in a bowl. Let marinate for 10 minutes.
  • Preheat a wok or large frypan over medium heat. Once hot, cook the beef mixture by stir-frying for 1-2 minutes until it browns. Mix in kidney beans, tomato, and 1 tablespoon water, then simmer for approximately 5 minutes until tomatoes soften. Stir in chopped coriander, and season with salt and pepper to taste.
  • Plate the mixture and garnish with fresh coriander. Serve alongside fluffy basmati rice and creamy guacamole.
