Anchovies, herbs, and peas create a flavorful dish.
Ingredients:
  • 4 x 2cm-thick beef scotch fillet steaks
  • 18.20 gm olive oil
  • 1kg frozen peas
  • 50g butter, melted
  • 62.50 ml chopped fresh mint
  • 70g butter, at room temperature
  • 3 drained anchovy fillets, finely chopped
  • 1 small garlic clove, crushed
  • 20.00 ml chopped fresh continental parsley
  • 20.00 ml chopped fresh chives
Instructions:
  • Prepare a flavorful anchovy butter by mixing butter, anchovy, garlic, parsley, and chives in a bowl. Shape into a 9 x 3cm log on a sheet of non-stick baking paper. Roll it up, twist the ends, and refrigerate for 30 minutes until firm.
  • Preheat a barbecue grill to medium-high heat. Brush both sides of the steak with oil, then generously season with pepper. Grill for 4-5 minutes on each side for a medium cook, or until your desired level of doneness. Remove from the grill, cover with foil, and let it rest for 5 minutes before serving.
  • In a saucepan, cook frozen peas in boiling water for 3-4 minutes until tender. Drain. Combine peas, butter, and mint in a food processor and blend until almost smooth. Season with salt and pepper. Return mixture to the pan, heat over medium heat, stirring occasionally, for 2-3 minutes until warmed through.
  • Cut the butter log into quarters crosswise, then top each steak with anchovy butter before serving alongside the pea mixture on individual plates.
