Ingredients:
  • 850g orange sweet potato, peeled, cut into 1cm-thick diagonal slices
  • Salt & freshly ground pepper
  • 4 (about 150g each) scotch fillet or porterhouse steaks
  • 400g broccoli, cut into florets
  • 60g reduced-fat margarine spread
  • 40g plain flour
  • 310ml milk
  • 40g cheddar cheese
Instructions:
  • Preheat the oven to 230°C. Prepare a large roasting pan with non-stick baking paper. Mix sweet potato with 1 1/2 tablespoons of oil. Season with salt and pepper. Spread the mixture in the pan. Roast for 30 minutes.
  • In a hot frying pan, sear the steak in the remaining oil for 3 minutes on each side, then remove and set aside.
  • First, let's prepare the cheese sauce. In a saucepan over medium heat, melt the spread. Stir in the flour and cook for 1 minute. Take the pan off the heat and whisk in the milk. Return the pan to medium heat and cook until the sauce boils and thickens. Remove from heat and add the cheddar. Season with salt and pepper. Microwave or steam the broccoli.
  • Divide the broccoli evenly onto serving plates, generously spoon over the delicious cheese sauce, and enjoy alongside the succulent steak and sweet potato.
