Elevate your grilled steak with a flavorful homemade pistachio pesto inspired by Italian cuisine.
Ingredients:
  • 4 No Added Hormones Beef Scotch Fillet Steaks or Porterhouse Steaks
  • 200g cherry tomatoes, halved
  • 60g Baby Spinach & Rocket
  • 45g pistachio
  • 25g parmesan
  • 60g pkt Baby Rocket
  • 125.00 ml mint leaves
  • 62.50 ml basil leaves
  • 1 garlic clove, crushed
  • 125ml olive oil
Instructions:
  • For a flavorful pistachio pesto, combine pistachios, parmesan, rocket, mint, basil, and garlic in a food processor. Pulse until finely chopped. With the processor on, gradually pour in oil until mixture is well blended. Season to taste.
  • Preheat a barbecue grill or chargrill to medium-high. Brush the steaks with oil and season with your favorite spices. Grill for 2 1/2 mins on each side for a perfect medium-rare or until they reach your desired doneness. Place the steaks on a plate, cover loosely with foil, and let them rest for 5 mins before serving.
  • Slice the steaks generously and distribute them among the serving plates. Artfully place the tomato, spinach, and rocket on the plates. Season to taste and serve with the delectable pistachio pesto.
