Steak with roasted tomato and basil butter

Elevate your grilled steak with a delicious homemade roasted tomato and basil butter.
Ingredients:
  • 750g potato
  • 100g Perino tomatoes
  • Spray oil
  • 125g butter, softened
  • 62.50 ml basil leaves
  • 20g parmesan
  • 1kg beef steak
  • Steamed green beans, to serve
Instructions:
  • Preheat the oven to 200C. Boil potatoes in a pot of salted water until tender, about 15 minutes. Drain.
  • Place the tomatoes on a baking tray lined with parchment paper. Drizzle with oil. Roast for 10-12 minutes or until they are wilted. Allow them to cool completely.
  • Spread potatoes on a baking tray lined with parchment paper. Gently crush them with the back of a spoon, then drizzle with oil and season. Roast for 40 minutes or until golden and crispy.
  • As the potatoes roast, combine tomatoes, butter, basil, and parmesan in a food processor. Blend until smooth. Transfer the butter mixture to a large piece of plastic wrap. Roll the butter tightly into a sausage shape, twist the ends of the plastic to seal. Chill in the fridge until firm.
  • Preheat a barbecue or chargrill over medium-high heat. Season steaks generously. Grill for 3 minutes on each side for medium rare, or until desired doneness. Place on a plate, cover with foil, and let it rest for 5 minutes. Add a slice of roasted tomato butter on top of each steak and serve alongside potatoes and beans. Enjoy your delicious meal!
