Beef topped with cheese and roasted tomatoes with basil dressing for a burst of color and flavor.
Ingredients:
  • 150g feta, crumbled
  • 50g goat's cheese
  • 60ml (1/4 cup) olive oil
  • 1 garlic clove, crushed
  • 8 ripe roma tomatoes, cores removed, halved lengthways
  • Salt & freshly ground black pepper
  • 4 (about 180g each, 4cm thick) beef \tfillet steaks
  • Baby spinach leaves, to serve
  • 250.00 ml firmly packed fresh basil leaves
  • 2 garlic cloves
  • 125ml (1/2 cup) olive oil
  • 40.00 ml red wine vinegar
Instructions:
  • Combine feta, goat's cheese, 2 tablespoons of oil, and garlic in a blender. Blend until smooth. Spread the mixture on a 20cm-square non-stick baking paper. Roll into a log and twist the ends to seal. Chill in the fridge for 1 hour until firm.
  • Preheat oven to 200°C. Arrange tomatoes on a baking tray, drizzle with remaining oil, and season with salt and pepper. Roast in the preheated oven for 20 minutes until tender.
  • Heat a non-stick frying pan over high heat. Sear the beef for 2 minutes per side until browned. Transfer to a roasting pan, season with salt and pepper, and bake in the oven for 5 minutes. Remove from oven.
  • Slice the cheese log into 4 equal portions. Place cheese slices on top of the beef. Roast for 8 more minutes until the beef is medium-rare or cooked to your preference, and the cheese is melted and golden. Take out of the oven.
  • For the basil dressing, add basil and garlic to a food processor. Pulse until finely chopped. While the processor is on, slowly pour in the mixed oil and vinegar until well combined. Season with salt and pepper to taste.
  • Place the tomatoes, cut side up, on plates. Layer with beef, drizzle with basil dressing, add spinach, and serve promptly.
