Easy Greek Skillet Dinner

Greek-inspired ground beef skillet topped with crumbled feta for a deliciously easy dinner.
Ingredients:
  • 0.5 pound dried elbow macaroni
  • 1 pound lean ground beef
  • 2 cloves garlic, pressed or minced
  • 2 medium carrots, quartered lengthwise and sliced
  • 1 large zucchini, quartered lengthwise and sliced
  • 1.5 tablespoons dried oregano leaves
  • salt and pepper
  • 1 (10.75 ounce) can condensed tomato soup, plus
  • 1 (10.75 ounce) can water
  • 1 ounce crumbled feta cheese
Instructions:
  • Bring a large pot of salted water to a boil. Cook elbow macaroni until al dente, 8-10 minutes. Drain and set aside.
  • In a large skillet over medium heat, sizzle ground beef and garlic until golden. If needed, remove excess fat. Introduce carrots and sauté until soft, around 5 minutes. Toss in zucchini and oregano, cook for another 5 minutes. Season generously with salt and pepper to taste.
  • Add tomato soup, water, and cooked elbow macaroni to the tender vegetables. Cook for an additional 5 to 10 minutes. Serve with optional crumbled feta cheese on top.
