Easy and flavorful Greek skillet lamb chops ready in 40 minutes!
Ingredients:
  • 4 lamb shoulder, arm or loin chops, about 1/2 inch thick (about 6 oz each)
  • 1 teaspoon dried oregano leaves
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 cloves garlic, finely chopped (1 tablespoon)
  • 1 tablespoon olive or vegetable oil
  • 1/2 cup chicken broth
  • 1 tablespoon lemon juice
  • 1 tablespoon butter or margarine
  • 1/4 cup sliced pitted Kalamata or ripe olives
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons crumbled feta cheese
Instructions:
  • Season both sides of the lamb generously with aromatic oregano, salt, and pepper. Then, infuse the lamb with the rich flavor of garlic by pressing it into the meat.
  • Heat oil in a large skillet over medium-high heat. Cook lamb for 4 to 6 minutes, turning once, until nicely browned.
  • Pour flavorful broth into the sizzling skillet and lower the heat to a gentle medium-low. Cover and let the lamb simmer for 8 to 10 minutes, giving it a gentle flip halfway through, until it reaches its succulent tenderness. Take the lamb out of the skillet and keep it cozy and warm.
  • Bring the liquid in the skillet to a boil. Simmer for 1 to 2 minutes until slightly reduced. Add lemon juice and butter, then cook and stir until slightly thickened. Mix in olives and parsley. Pour the sauce over the lamb and sprinkle with cheese.
