Easy, kid-friendly one-pot meal: Taco seasoned ground beef and rice with corn. Serve with a green salad for a quick and tasty weeknight dinner.
Ingredients:
  • 1 pound extra lean ground beef
  • 1 (8.8 ounce) pouch UNCLE BEN'S® Ready Rice® Long Grain & Wild
  • 0.75 cup water
  • 1 (1.25 ounce) package taco seasoning mix
  • 0.5 cup frozen whole kernel corn, thawed
  • 1 cup shredded white Cheddar cheese
  • 2 green onions, sliced
  • 1 (12 ounce) bag tortilla chips
Instructions:
  • In a large nonstick skillet over medium heat, brown the ground beef while breaking it up, about 8 minutes. Drain any excess liquid from the pan, then stir in water and taco seasoning.
  • Prepare the rice as directed on the package. Combine the cooked rice with the beef mixture and mix in the corn. Raise the heat and bring it to a boil. Let it simmer until the liquid is absorbed, approximately 7 minutes, while stirring constantly. Take the pan off the heat.
  • Add the cheese and blend it in smoothly. Garnish with green onions for extra flavor. Enjoy with tortilla chips.
