Upgrade taco night with these easy, speedy one-pan baked pulled pork tacos - ready in just 20 minutes for a delicious, hassle-free weeknight meal.
Ingredients:
  • 12 hard taco shells
  • 250g pkt Slow Cooked Pulled Pork
  • 420g can Black Beans, drained, rinsed
  • 240g jar Mexican Sauce
  • 120g (1 1/2 cups) Shredded Tasty Cheese
  • 1 tomato, finely chopped
  • 125g can Corn Kernels, drained
  • 40.00 ml chopped fresh coriander leaves
  • 42.00 gm lime juice
  • 65g (1/4 cup) Creamy Chipotle Topping
Instructions:
  • Preheat oven to 220°C (200°C fan forced).
  • Arrange taco shells in a large baking dish, standing upright. Fill each shell with pork, beans, Mexican sauce, and 1 cup of cheese. Sprinkle the remaining cheese over the top. Bake for 10 minutes, or until the cheese is melted and the pork is heated through.
  • In a bowl, mix together tomatoes, corn, fresh cilantro, and lime juice. Season with salt and pepper to taste.
  • Garnish shells with zesty chipotle topping and fresh tomato mixture. Ready to enjoy!
