Effortless one-pan baked penne alla vodka: luscious pink pasta in under an hour, no boiling needed. Perfect for a quick and easy weeknight dinner.
Ingredients:
  • 1/3 cup vodka
  • 2 cups water
  • 3 cups marinara sauce, jarred or homemade
  • 3/4 cup heavy cream or coconut cream
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon Italian seasoning or dried oregano
  • 1 pound penne pasta
  • 2 cups baby spinach
  • Salt, to taste
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh basil or parsley, optional
Instructions:
  • Preheat your oven to 350°F.
  • In a 9x13 baking pan, mix together marinara sauce, vodka, water, coconut cream, black pepper, and Italian seasoning until well combined.
  • Pour the penne into the pan, ensuring a gentle transfer to prevent splattering. Mix to coat the pasta in liquid, then evenly distribute the spinach on top, smoothing it out with a spatula.
  • Enclose the pan with aluminum foil and bake for 40 minutes.
  • Sprinkle shredded mozzarella cheese on top of the pasta and gently stir in the spinach. Taste a piece of pasta and add salt if needed. Keep the pasta coated in sauce to ensure it's well seasoned.
  • Continue cooking for an additional 10 minutes without covering. Watch as the cheese melts and the sauce thickens. Garnish with fresh basil or parsley before serving. Leftovers can be stored in the refrigerator in an airtight container for 5 to 6 days. Reheat by covering with foil in a 350°F oven, using a small saucepan, or in the microwave. Enjoy the dish?
