Steak with roasted tomato and basil butter

Elevate your grilled steak with delicious homemade roasted tomato and basil butter.
Ingredients:
  • 750g potato
  • 100g Perino tomatoes
  • Spray oil
  • 18.20 gm olive oil
  • 125g butter, softened
  • 62.50 ml basil leaves
  • 20g parmesan
  • 1kg beef steak
  • Steamed green beans, to serve
Instructions:
  • Preheat oven to 200C. Boil potatoes in salted water for 15 minutes until tender. Drain.
  • Spread tomatoes on a baking tray lined with parchment paper. Lightly mist with oil and roast for 10-12 mins, or until slightly softened. Allow to cool completely.
  • Spread the potatoes on a baking tray lined with parchment paper, gently crush them with the back of a spoon, and then drizzle with oil. Season with your favorite spices. Roast for 40 minutes or until beautifully golden and crispy.
  • After roasting the potatoes, combine tomatoes, butter, basil, and parmesan in a food processor and pulse until mixed. Transfer the butter mixture onto a large piece of plastic wrap and shape it into a sausage form. Secure the ends by twisting the plastic wrap and chill in the fridge until firm.
  • Preheat a barbecue or chargrill over medium-high heat. Season steaks with salt and pepper. Grill steaks for 3 minutes on each side for medium rare or until desired doneness. Remove from heat and cover with foil. Let them rest for 5 minutes. Place a slice of roasted tomato butter on each steak and serve with potatoes and beans.
