Grill perfected T-bone steaks, topped with zesty tomato butter.
Ingredients:
  • 125g unsalted butter, softened
  • 62.50 ml finely chopped semi-dried tomatoes
  • 30.00 ml baby capers, rinsed and drained
  • 40.00 ml chopped flat-leaf parsley
  • 5.60 gm tomato paste
  • 4 beef t-bone steaks, trimmed
  • Salt and cracked black pepper
  • Flavoured butter, to serve
  • Steamed vegetables or salad, to serve
Instructions:
  • Combine softened butter with tomato, capers, parsley, and tomato paste in a bowl, mixing thoroughly until fully incorporated.
  • On a clean work surface, lay out a large piece of plastic wrap. Shape the butter mixture into a log and wrap it tightly in the plastic, twisting the ends to seal. Chill until firm.
  • Preheat a barbecue grill plate on high. Season the steak with salt and pepper, then grill for 3 minutes on each side for medium doneness or to your preference. Rest the cooked steak covered for a few minutes before serving.
  • Arrange steak on individual plates and garnish with a few slices of seasoned butter. Serve alongside steamed vegetables or a fresh salad.
