Ingredients:
  • 8 beef minute steaks
  • 1 red onion, chopped
  • 4 tomatoes, chopped
  • 62.50 gm dry white wine
  • 20.00 ml balsamic vinegar
  • 82.50 ml pitted kalamata olives, halved
  • 40.00 ml flat-leaf parsley, chopped
  • 20.00 ml basil, chopped
  • Hot chips, to serve
  • Steamed beans, to serve
Instructions:
  • In a heavy-based pan over medium-high heat, sear the steaks in half of the oil for 1 minute on each side. Transfer them to a plate and cover with foil.
  • In a frying pan, heat the remaining oil over medium heat. Add onion and cook for 3 minutes until soft. Then, add tomatoes and wine, and simmer while stirring for 3 to 4 minutes until the tomatoes are soft.
  • Mix in the vinegar, olives, herbs, salt, and pepper. Plate the steaks and generously spoon over the sauce. Serve alongside crispy chips and flavorful beans.
