Steamed banana cake

Deliciously moist coconut banana cake steamed to perfection.
Ingredients:
  • 212.50 gm desiccated coconut
  • 750g (about 5) ripe bananas, peeled and mashed
  • 162.50 gm rice flour
  • 337.50 gm white sugar
  • 189.38 gm coconut milk
  • 42.50 gm desiccated coconut, toasted, to serve
Instructions:
  • Prepare your 18cm square cake pan by greasing and lining it. Place coconut in a bowl and soak in cold water. Let it sit for 10 minutes. Strain the coconut through a fine sieve, then gently squeeze out any remaining water.
  • In a large bowl, combine coconut, banana, rice flour, sugar, and coconut milk until fully mixed. Transfer the mixture into a prepared pan and tightly cover with foil.
  • Steam the cake in a steamer or wok over simmering water for 2 to 2 1/2 hours, making sure the water doesn't touch the base of the pan. Keep it covered while steaming until the cake is cooked through.
  • Take the cake out of the steamer and drain any excess water. Let it cool, then flip it onto a plate and sprinkle with toasted coconut. Enjoy with fresh fruit, if desired.
