Upgrade your banana cake with a more decadent and simple twist. Choose to bake it in small foil cups or traditional banana leaves for a unique touch.
Ingredients:
  • 1 (3.5 ounce) package flaked coconut
  • 0.25 teaspoon salt
  • 0.5 cup rice flour
  • 0.75 cup tapioca flour
  • 0.5 tablespoon arrowroot starch
  • 1 cup unsweetened coconut cream
  • 1 pound ripe bananas, mashed
  • 0.125 teaspoon salt
  • 0.5 cup coconut milk
Instructions:
  • Combine the coconut with a hint of salt in a bowl; set aside.
  • In a large bowl, combine the rice flour, tapioca flour, and arrowroot starch, sifting them together. Stir in the coconut cream until the flours are fully incorporated, about 10 minutes. Mix in the sugar until dissolved. Add the mashed banana, ensuring it's well mixed. Incorporate 1/8 teaspoon salt and coconut milk, mixing thoroughly. Transfer the batter into a square baking tin or individual aluminum foil cups. Sprinkle the reserved coconut on top.
  • Boil 1-1/2 inches of water in a steamer with a large basket. Steam the cake for 20-25 minutes until cooked through.
