Thai-Inspired Steamed Chicken Thighs

Coconut-infused chicken thighs with zesty Thai chile, fish sauce, cilantro, and ginger glaze.
Ingredients:
  • 4 bone-in chicken thighs, with skin
  • 1 teaspoon sea salt, or to taste
  • 1 (2 inch) piece fresh ginger, thinly sliced, or to taste
  • 3 sliced green onions, white and green parts separated, divided
  • 1 cup coconut juice
  • 4 tablespoons water
  • 4 Thai chiles, chopped
  • 5 sprigs fresh cilantro, stems and leaves separated, divided
  • 2 cloves garlic, chopped
  • 1 (1 inch) piece fresh ginger, coarsely chopped
  • 1.5 tablespoons fish sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon fresh lime juice
  • 1 teaspoon palm sugar
  • 2.5 tablespoons vegetable oil
Instructions:
  • Fill a large pot with 4 to 5 inches of water and place a large steam rack inside.
  • Season chicken thighs with salt, place ginger slices on top, and arrange them evenly in a large, shallow, heat-proof bowl. Sprinkle white parts of green onions over the chicken, then pour in coconut juice and water. Set the bowl on the steam rack in the pot.
  • Cover the pot and bring the water to a boil. Simmer gently until the chicken is fully cooked, about 35 minutes, and reads 165 degrees F (74 degrees C) on an instant-read thermometer near the bone.
  • As the chicken cooks, blend Thai chilies, cilantro stems, garlic, ginger, fish sauce, vinegar, lime juice, and palm sugar in a food processor until smooth. Pour the sauce into a bowl and mix in the green parts of the green onions.
  • In a smoking hot skillet, heat vegetable oil for about 4 minutes. Remove from heat and pour the hot oil into the sauce mixture. Stir well to combine.
  • Gently lift the chicken bowls from the pot using an oven mitt or dish retriever tool. Place the chicken on a plate and remove the ginger and green onion pieces.
  • Strain the remaining cooking liquid into the sauce mixture and stir well to combine.
  • Drizzle sauce generously over chicken and sprinkle with fresh cilantro leaves for a vibrant finish.
