Add zest to simple chicken and mushroom stir-fry with generous fresh ginger.
Ingredients:
  • 1 tablespoon olive oil, or more as needed
  • 3 cloves garlic, minced
  • 1 serrano pepper, diced
  • 4 (5 ounce) skinless, boneless chicken breasts, cubed
  • 0.25 cup water
  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon fish sauce
  • 1 (8 ounce) package sliced fresh mushrooms
  • 1 cup grated fresh ginger
Instructions:
  • In a hot wok, sizzle oil, garlic, and serrano pepper until aromatic, approximately 30 seconds. Toss in chicken and cook until done, around 7 minutes, adding water if needed to keep it moist.
  • Pour in a flavorful mix of soy sauce, oyster sauce, and fish sauce. Toss in mushrooms and sauté for 4 minutes. Introduce ginger to the wok and stir-fry for an additional 1 to 2 minutes.
