Infuse flavor into chicken with Thai-inspired marinade.
Ingredients:
  • 125.00 ml light coconut-flavoured evaporated milk
  • 82.50 ml coriander, chopped
  • 1 stalk lemongrass, white part, finely sliced
  • 40.00 ml ginger, finely grated
  • 1 lime, juiced
  • 2 small fresh red chillies seeded, finely chopped
  • 12.20 gm fish sauce
  • 500g chicken tenderloins, flattened
  • Cooked brown rice, lime wedges, steamed baby bok choy to serve
Instructions:
  • Preheat oven to a cozy 180C.
  • Combine creamy evaporated milk with fragrant coriander, aromatic lemongrass, zesty ginger, tangy juice, spicy chili, and savory fish sauce in a bowl, ensuring thorough mixing. Add chicken to the bowl and toss generously to coat in the flavorful mixture.
  • Lay out chicken on a baking paper-lined baking tray. Bake until fully cooked, for 10-15 minutes. Serve alongside rice, lime wedges, and steamed baby bok choy.
