A quick and delicious family favorite meal for busy weeknights.
Ingredients:
  • 9.20 gm olive oil
  • 1 large red onion, thinly sliced
  • 750g Chicken Mince
  • 1 bunch coriander
  • 68.75 gm sweet chilli sauce
  • 48.80 gm fish sauce
  • 42.00 gm lemon juice
  • 12.00 gm brown sugar
  • Steamed baby pak choy, to serve (see tip)
  • Steamed jasmine rice, to serve
Instructions:
  • In a large non-stick frying pan over medium heat, warm some oil. Add onion and cook for 3 minutes until soft. Then add the mince and cook for 10 minutes, breaking it up with a wooden spoon until browned.
  • Prepare the coriander by cutting off the roots ends, washing, and finely chopping the stems. Set aside the leaves. Mix the chopped coriander with the mince, sweet chilli sauce, fish sauce, lemon juice, and sugar. Cook on low heat for 5 minutes, stirring occasionally, until heated through.
  • Plate the mince alongside fresh coriander leaves, steamed baby pak choy, and fluffy steamed jasmine rice.
