Create gourmet ginger chicken at home with this tasty recipe.
Ingredients:
  • 1.5 cups uncooked jasmine rice
  • 3.5 cups water
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 pound skinless, boneless chicken breast halves - cut into thin strips
  • 1 tablespoon Asian fish sauce
  • 1 tablespoon oyster sauce
  • 0.5 cup fresh ginger, cut into matchsticks
  • 1 large red bell pepper, cut into strips
  • 0.75 cup sliced fresh mushrooms
  • 4 green onions cut into 2-inch pieces
  • 0.5 teaspoon Thai red chile paste, or to taste
  • 2 tablespoons chicken broth
  • 2 tablespoons fresh cilantro leaves
Instructions:
  • In a saucepan, get the rice and water boiling. Lower the heat to medium-low, cover, and let it simmer until the rice is tender and has absorbed all the liquid, around 20 to 25 minutes.
  • Heat a wok or large skillet over medium-high heat. Cook the garlic and chicken for 2 minutes. Add fish sauce, oyster sauce, sugar, ginger, red pepper, mushrooms, and onions. Keep cooking and stirring until chicken is cooked through and veggies are nearly tender, about 3 minutes. Mix chile paste with chicken broth and add to the mixture. Season with salt and pepper, then garnish with cilantro leaves. Serve with hot rice.
