Thai-inspired spaghetti with spicy peanut sauce and steamed vegetables.
Ingredients:
  • 1 (8 ounce) package uncooked spaghetti
  • 1 tablespoon cornstarch
  • 1 cup vegetable broth
  • 0.33333334326744 cup creamy peanut butter
  • 3 tablespoons soy sauce
  • 3 tablespoons honey
  • 3 tablespoons brown sugar
  • 1 teaspoon sesame oil
  • 1 teaspoon ground ginger
  • 0.25 teaspoon ground red pepper
  • 2 tablespoons sake
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 cup broccoli florets
  • 1 cup carrots, sliced
  • 0.5 cup red bell pepper, chopped
  • 0.5 cup sugar snap peas
Instructions:
  • 1. Fill a large pot with lightly salted water and bring it to a rolling boil. Add spaghetti and cook until al dente, about 12 minutes. Drain in a colander in the sink.
  • Whisk cornstarch in vegetable broth until smooth. Add peanut butter, soy sauce, honey, brown sugar, sesame oil, ground ginger, and red pepper. Boil over medium-high heat, then simmer until thickened for about 5 minutes. Stir in sake and keep warm.
  • In a large skillet over medium heat, warm up the vegetable oil. Sauté the garlic and onion until the onion turns translucent, around 5 minutes. Add broccoli, carrots, red bell pepper, and sugar snap peas. Lower the heat, cover, and steam until the vegetables are tender, about 5 minutes. Mix in the peanut sauce and pasta before serving.
