Thai mussels cooked in coconut broth with lime, white wine, red curry, garlic, fish sauce, and sugar.
Ingredients:
  • 1 (13.5 ounce) can unsweetened coconut milk
  • 0.33333334326744 cup fresh lime juice
  • 0.33333334326744 cup dry white wine
  • 1.5 tablespoons Thai red curry paste
  • 1.5 tablespoons minced garlic
  • 1 tablespoon Asian fish sauce
  • 1 tablespoon white sugar
  • 5 pounds fresh mussels, scrubbed and debearded
  • 2 cups chopped fresh cilantro
Instructions:
  • In a large pot, mix together coconut milk, lime juice, white wine, curry paste, garlic, fish sauce, and sugar. Stir until sugar and curry paste are dissolved. Bring the mixture to a boil, then let it boil for 2 minutes. Add mussels and cover the pot. Cook, stirring occasionally, until mussels open, for about 5 to 8 minutes.
  • Take the pot off the heat and remove any unopened mussels. Transfer the mussels and their broth to a serving dish and mix in fresh cilantro.
