Blue eye cod with refreshing melon salsa.
Ingredients:
  • 6 baby potatoes
  • 2 x 175g ling fish fillets
  • 1/8 rockmelon, peeled, finely chopped (see Note)
  • 200g seedless watermelon, peeled, finely chopped (see Note)
  • 1/2 long red chilli, deseeded, finely chopped
  • 1 tsp finely chopped basil
  • 18.20 gm extra-virgin olive oil, plus extra to drizzle
  • 5.30 gm lime juice
Instructions:
  • Steam potatoes in a large steamer over boiling water for 15 minutes. Season fish and place each fillet on a small piece of baking paper. Arrange fish on top of the potatoes. Continue to steam both potatoes and fish for an additional 15 minutes, or until both are cooked through.
  • Combine juicy, ripe melons with a kick of chili, fragrant basil, a drizzle of oil, and a squeeze of fresh lime juice. Mix gently to coat everything evenly with seasoning.
  • Divide the fish and potatoes among 4 plates. Top with the refreshing melon salsa and finish with a drizzle of extra oil, if desired.
