Steamed prawn dumplings with black vinegar sauce

Ingredients:
  • 250g green prawn meat
  • 250g chicken mince
  • 4 spring onions, thinly sliced
  • 40.00 ml grated ginger
  • 3 tsp sesame oil
  • 15.90 gm light soy sauce
  • 1.13 gm sugar
  • 2.50 gm cornflour
  • 30 egg wonton wrappers (see note)
  • 125ml vinegar
  • 36.40 gm peanut oil
  • 62.50 ml chopped coriander
  • 1 long red chilli, deseeded, finely chopped
  • 20.00 ml grated ginger
  • 5.30 gm soy sauce
Instructions:
  • Combine prawns, chicken, spring onion, ginger, sesame oil, soy sauce, sugar, and cornflour in a food processor until mixture is cohesive. Spoon 1 teaspoon of filling onto each wonton wrapper, moisten edges with water, fold into a triangle, and seal firmly. Arrange dumplings in a single layer on baking paper. Line a steamer with baking paper, place over boiling water, and steam dumplings in batches for 5 minutes until filling is cooked and wrappers are tender.
  • Combine all the ingredients for the black vinegar sauce in a jar and shake vigorously.
  • Drizzle the hot dumplings with the black vinegar sauce and serve.
