Whip up a quick and refreshing dish with fresh, healthy ingredients.
Ingredients:
  • 500g large peeled green prawns (tails intact)
  • 42.00 gm light soy sauce
  • 1 lime, zested, juiced
  • 1 small red chilli, seeds removed, sliced
  • 2 garlic cloves, thinly sliced
  • 2.5cm piece ginger, cut into matchsticks
  • 400g sugar snap peas
  • 2 spring onions, thinly sliced
  • 62.50 ml coriander leaves
  • 18.20 gm peanut oil or sunflower oil
  • 2 tsp sesame oil
  • Sesame seeds, to serve
  • 200g basmati rice
Instructions:
  • Mix prawns with soy sauce, lime zest and juice, chili, garlic, ginger, and 2 tablespoons of water in a bowl. Let it marinate for 10 minutes.
  • Fill a wok halfway with water and bring to a simmer over medium-high heat. Line a bamboo steamer with baking paper and place over wok. Steam prawns for 4-5 minutes until cooked. In the meantime, steam or blanch sugar snaps for 2-3 minutes until tender. Toss prawns with sugar snaps, spring onion, and coriander in a bowl. Serve the mixture on plates.
  • Heat the oils in a small pan over medium heat until smoking, about 1-2 minutes. Drizzle over prawns, sprinkle with sesame seeds, and serve with rice.
