Homemade Chinese steamed buns: light, fluffy, and delicious dim sum with no filling. Enjoy soft, puffy mantou straight from the steamer.
Ingredients:
  • 1.75 cups all-purpose flour, divided
  • 0.75 cup warm water, divided
  • 1 tablespoon active dry yeast
  • 1 teaspoon white sugar
  • 2 tablespoons white sugar
  • 1 tablespoon vegetable oil
  • 0.25 teaspoon salt
  • 0.5 teaspoon baking powder
Instructions:
  • Combine 1/4 cup flour, 1/4 cup warm water, yeast, and 1 teaspoon sugar in a large bowl. Let it rest for 30 minutes.
  • Combine the remaining 1 1/2 cups flour, remaining 1/2 cup warm water, 2 tablespoons sugar, vegetable oil, and salt. Knead until the dough is smooth and elastic. Transfer to a greased bowl, coat with oil, and let rise until tripled in size, about 2 1/2 to 3 hours.
  • Gently deflate dough and transfer to a floured surface. Evenly sprinkle baking powder over the dough and knead for 5 minutes.
  • Divide the dough in half. Place one half in a covered bowl. Divide the other half into 12 equal pieces and shape each into a ball with a smooth surface facing up. Repeat this step with the remaining dough half. Cover all 24 dough balls and let them sit until they double in size, about 30 minutes.
  • 1. Bring water in the wok to a low boil. Position a steaming plate on a wire rack in the middle of the wok with about 2 inches of space around it. Steam the buns in batches, leaving 1 to 2 inches of space between each bun on waxed paper squares.
  • Steam the buns covered for 15 minutes. Be cautious when removing the lid to prevent condensation from dripping onto the buns. Steam the remaining buns until all are cooked.
