Delicious Chinese Steamed Buns with a flavorful filling of meat, shrimp, ginger, and a sweet rice wine and soy sauce mixture.
Ingredients:
  • 8 ounces chopped pork
  • 1 (4 ounce) can shrimp, drained and chopped
  • 2 green onions
  • 1 tablespoon chopped fresh ginger root
  • 1 tablespoon light soy sauce
  • 1 tablespoon rice wine
  • 1 tablespoon vegetable oil
  • ground black pepper to taste
  • 2.5 tablespoons water
  • 1 recipe Chinese Steamed Buns
Instructions:
  • Sear chopped pork in a wok over medium heat. Add chopped shrimp after 3 minutes, if desired. Cook until pork is fully cooked. Drain, season with salt, and let cool.
  • Combine the green onions, ginger, soy sauce, rice wine, oil, sugar, and pepper in a bowl. Add the minced meat and mix well. Pour in the water and stir until fully combined. Chill the mixture in the freezer for 2 hours or in the refrigerator overnight to enhance flavors and firm up.
  • Mix together flour, yeast, sugar, baking powder, and water until a smooth dough forms for Chinese Steamed Buns.
  • Form dough into balls and roll them out into circles resembling Won-Ton wrappers. Fill each circle with 1 tablespoon of prepared meat mixture, wrapping the dough around the filling. Place the folded side down on wax paper squares and allow to double in size for about 30 minutes.
  • Bring water in the wok to a boil and reduce heat to medium-high. Place a steam-plate on a small wire rack in the wok. Arrange buns on wax paper on the steam-plate with some space between them. Make sure there is enough space between the steam-plate and the wok. Cover with a lid and steam buns for 15 to 20 minutes.
  • Remove the lid before turning off the heat to prevent water from dripping back onto the bun surface, which can create yellowish "blisters". Steam batches of buns until all are cooked.
