Steamed Walleye (Pickerel) on the Grill

Grilled pickerel cooked with butter and lemon in foil for a healthier twist on a classic dish.
Ingredients:
  • 8 (4 ounce) fillets walleye
  • 2 sheets aluminum foil
  • 0.25 cup clarified butter
  • 0.25 cup lemon juice
  • salt and black pepper to taste
  • 1 large onion, sliced into rings
Instructions:
  • Get your outdoor grill ready by preheating it to medium-high heat and giving the grate a light coating of oil.
  • Lay two walleye fillets on a large sheet of heavy-duty aluminum foil. Drizzle with melted butter and lemon juice, season with salt and pepper, and add half of the onion rings on top. Create a sealed pouch by folding and rolling the foil. Repeat with the remaining ingredients to make a second pouch.
  • Grill the pouches until the fish is fully cooked and flakes easily with a fork, for about 15 to 20 minutes.
