Ingredients:
  • 200g good-quality milk chocolate
  • 60ml thickened cream
  • 20.00 ml dark rum or liqueur of choice
  • 200g milk chocolate melts
Instructions:
  • In a heatproof bowl, gently melt the milk chocolate and cream over simmering water. Ensure the bowl doesn't touch the water. Stir with a metal spoon until smooth. Take off the heat, add the liqueur, mix well. Cover with plastic wrap and chill in the fridge for 1 hour until firm. Then roll into balls.
  • Scoop out 1 1/2 teaspoons of chocolate mixture and roll into a ball using your hands. Place on a plate or oven tray lined with baking paper. Repeat with the rest of the chocolate mixture. Cover with plastic wrap and refrigerate for 30 minutes to firm up.
  • Melt the chocolate melts in a heatproof bowl over simmering water, stirring with a metal spoon until smooth. Remove from heat.
  • Prepare a baking paper-lined oven tray. Dip each truffle into the melted chocolate using a fork for an even coating. Gently tap off excess chocolate by tapping the fork on the bowl's edge. Place truffles on the tray and let them set for 30 minutes before enjoying.
