Step-by-step chocolate cake

Follow this foolproof recipe for delicious chocolate cake.
Ingredients:
  • 125g butter, chopped
  • 2 tsp instant coffee powder
  • 185ml water
  • 100g good-quality dark cooking chocolate, chopped
  • 200g brown sugar
  • 75g self-raising flour
  • 75g plain flour
  • 30g cocoa powder
  • 30g almond meal
  • 1 egg, lightly whisked
  • Pink and silver cachous, to decorate
  • 200g good-quality dark chocolate, chopped
  • 125g creme fraiche
Instructions:
  • Preheat your oven to 160°C and prepare an 18cm round cake pan by greasing and lining the base and sides.
  • In a saucepan over gentle heat, combine butter, coffee, water, chocolate, and sugar. Stir continuously for 2-3 minutes until butter and chocolate are melted and mixture is velvety. Take off the heat and let it cool for 5 minutes before using.
  • Pour the mixture into a bowl. Sift the flours and cocoa powder over it, then add the almond meal. Lightly fold the flour in with a balloon whisk. Mix in the egg until combined.
  • Transfer the cake batter into the greased pan. Bake for 1 hour or until a skewer comes out clean when inserted in the center. Let it rest for 30 minutes before flipping onto a wire rack to cool.
  • For the chocolate ganache icing, combine the chocolate and creme fraiche in a heatproof bowl set over simmering water. Stir with a metal spoon for 3-4 minutes until the chocolate is melted and the mixture is smooth.
  • Split the cake in half using a large, serrated knife. Place the bottom half on a serving dish and spread half of the ganache over it. Place the other cake half on top and spread the remaining ganache over the top. Sprinkle with cachous to decorate, then set aside for 30 minutes to set. Serve by cutting into wedges.
