Sticky apricot chicken tenders recipe

Delicious apricot jam chicken made with tender chicken tenderloins - a flavorful dinner favorite!
Ingredients:
  • 12 (about 500g) baby chat potatoes, cut into 7mm thick slices
  • 2 zucchini, cut into 7mm thick slices
  • 100g green beans, sliced diagonally
  • 240g (2/3 cup) apricot jam
  • 42.00 gm soy sauce
  • 2 green shallots, thinly sliced
  • 12 (about 600g) chicken tenderloins
  • Chopped fresh continental parsley, to serve
Instructions:
  • Preheat your oven to 200°C/180°C fan forced. Place potato slices on a microwave-safe plate, cover with plastic wrap, and microwave on High for 2 minutes until potatoes are tender.
  • Take 4 large square sheets of foil and generously spray the center with olive oil. Layer the potatoes in the middle in a single even layer. Add the zucchini and beans on top.
  • In a large bowl, mix jam, soy sauce, and shallots. Set aside 2 tablespoons of mixture. Add chicken to the remaining mixture and toss to coat. Spread chicken over the vegetables and pour any extra sauce on top. Seal everything in foil tightly, place on a baking tray, and bake for 20 minutes until chicken is fully cooked.
  • Switch the oven setting to grill. Unwrap the parcels and coat the chicken tops with the saved jam mixture, followed by a light spray of oil. Grill for 3-4 minutes until lightly browned. Finish by sprinkling parsley before serving.
