Sticky fig and ginger pudding

Decadent fig and ginger pudding with a luscious caramel sauce.
Ingredients:
  • 180ml double cream
  • 180g butter
  • 90g brown sugar
  • 1 orange, rind grated
  • 150g brown sugar
  • 4 eggs, separated
  • 180g plain flour
  • 8.00 gm baking powder
  • 120g dried figs, chopped
  • 50g glace ginger, chopped
Instructions:
  • Combine double cream, butter, and brown sugar in a saucepan over medium-low heat until smooth. Pour half a cup of the sauce into the bottom of a greased 1.2 litre pudding basin.
  • Cream together 90g butter, the zest of 1 orange, and 150g brown sugar until light and fluffy. Mix in 4 egg yolks. Gently combine 180g plain flour, 2 teaspoons baking powder, 120g chopped dried figs, and 50g chopped glace ginger. In a separate bowl, whip 4 egg whites until soft peaks form, then carefully fold into the batter.
  • Place the mixture in a basin. Cover it with baking paper, then foil, and secure with string. Gently lower it into a saucepan of boiling water with a trivet at the bottom. Steam for 2 hours. Serve with the extra sauce on the side.
