Apple and fig compote

Simple yet decadent red apple and dried fig compote.
Ingredients:
  • 56.25 gm white sugar
  • 20.00 ml ginger, grated
  • 1/4 tsp fennel seeds
  • 375g dried figs, halved
  • 2 cardamom pods, bruised
  • 1 cinnamon stick
  • 4 Granny Smith apples, peeled, cored and cut into wedges
Instructions:
  • In a medium saucepan, combine sugar, ginger, cardamom pods, cinnamon, fennel seeds, and 1 cup of water. Stir over medium heat until sugar dissolves. Add apple and figs, cover, and simmer on low heat for 15 minutes until fruit is tender. Uncover and simmer for an additional 10 minutes, stirring occasionally, until liquid thickens into a syrup.
  • Keep it fresh and store in a sealed container in the fridge for up to 1 week. Enjoy it warm or at room temperature alongside roast pork.
